“Drunken” Pasta Makes for Quick, Delicious Weeknight Meals


Whipping up quick, tasty dinners on busy weeknights can be challenging. This “drunken” pasta requires only two ingredients: dry red wine and pasta, with the option to beef it up with things already in your pantry.

Combine 3 and ¼ cups of red wine with 1 and ½ cups of water and salt. Use this to cook the pasta. That’s pretty much how simple it is. This results in a rich, slightly sweet (and very red) spaghetti dinner. If you have some thyme or parsley, parmesan cheese, or just a little black pepper, toss it in there. They suggest garlic, red pepper, fresh herbs, grated parmesan or romano cheese, olive oil, onions, even cannellini beans if you want to make it a little heartier.

If you decide to add aromatics like garlic or dried herbs, simmer them in olive oil first and add some of the cooking liquid from the pasta. The starches in the cooking liquid will help mingle the flavors together. Just before you serve the pasta, toss in those extra ingredients, and you’re all finished.
